These are the easiest cookies you will ever make in your whole life, guaranteed! The secret? They're made from cake mix! Genius! Insanely easy and very yummy!
1 package Devil's Food cake mix (we prefer Betty Crocker)
2 eggs
around 1/4 cup of canola oil
1 tablespoon pure vanilla
around 1/4 cup of canola oil
1 tablespoon pure vanilla
1/2 cup chocolate chips
Icing
8 ounces (one package) cream cheese, room temperature

1/2 cup unsalted butter
1 cup confectioners sugar
1 teaspoon vanilla extract

*I pretty much made my own recipe for the cookies based from a couple different recipes on the Internet. I knew I didn't want to have cream cheese in the cookies because that's the main ingredient in the icing! So I substituted cream cheese for oil and added the vanilla and the chocolate chips for flavor.
Cookies
1. Preheat oven to 350 degrees. Stir by hand the cake mix, eggs, oil and vanilla in a large bowl until dough forms. Stir in the chocolate chips. Note: Only use enough oil for the dough to begin to stick together. Don't add to much or the cookies will be very oily and icky!
2. Roll into balls around 1 inch in diameter and place around 1 inch apart on an ungreased cookie sheet.
3. Bake for around 6 - 9 minutes or until the middle is just set. The cookies do harden a bit once they cool.
Icing
1. Place cream cheese in a medium mixing bowl. Cream cream cheese using a wooden spoon. Gradually add butter and continue beating until smooth. Add vanilla and continue to stir.
Take one cookie and spread a generous amount of icing on it, then top it off with another cookie.
There you have it! Delicious chocolate cookie sandwiches that taste like a cookies and cream chocolate bar! Yummy!
